After the Christmas festive, I usually want something light and easy to eat with my tea. Madeleine French cookies are the perfect choice. They don't take a lot of time to bake and the dough could be made in advance and frozen. Here is my recipe for Madeleines.
You will need:
6 tbsp of melted butter
2 large eggs
1/3 cup of sugar
1/2 tbsp of salt
1 1/2 tsp of baking powder
2/3 cup of baking flour
pure vanilla extract
honey
2 tbsp orange zest and orange juice of 1/2 orange

How to make the dough:
First melt the 3-4 tbsp butter over medium heat until it goes brown and has nutty and toasted smell. Take it off the heat and let it cool.
Whip the eggs and sugar in a mixer until light and fluffy. Add flour, baking powder, vanilla extract, salt, pour in melted butter, while still mixing. Then add orange zest and juice.

Preheat the oven to 375 F and put inside the pan to heat it. remove the pan and butter the molds in it with melted butter. Pour the dough in each mold filling only 3/4 full as the dough will rise while baking.
Put the pan in the oven and bake for 5-8 min. When the borders of the cookies start to brown they are ready. Stick a toot
hpick to check if the cookie baked inside.
Remove the pan from the oven and immediately take the cookies out.
They are great with tea and fruits, and can be served warm as well as cool.
You can never go wrong with these cookies they are so easy to make that even I can do it. Every would love them because they are soft and delicious and they will make your desert table look fabulous.
